1  Pork Rib Paksiw in Recipes and Cooking Tips by SLM on: November 23, 2007 02:01:33 AM


Paksiw is very popular in the Philippines and could easily be used to cook other meats such as fish, poultry and beef. Paksiw is cooking something with vinegar and sugar and also used as means to cook the left-overs of letchon and roast chicken or beef.

Ingredients:

    * 1 kg pork rib & belly
    * 1/2 cup vinegar
    * 1 tbsp minced garlic
    * 1/2 cup soy sauce
    * 1/2 cup water
    * 3 to 4 large red onions, sliced
    * 4 tbsps. brown sugar
    * 2 pcs bay leaves
    * freshly crushed peppercorns
    * salt to taste

Procedure:

   1. Separate ribs. In a saucepan, mix together meat, water, vinegar and  soysauce. Leave to boil until liquid had lessened to half or meat is tender.
   2. Add the garlic, onions, bay leaves and sugar. Continue to cook over medium-to-high heat. Do taste the sauce and adjust to your liking by adding more of vinegar or soy sauce or water or sugar. stir often to prevent from sticking.
   3. Cook until sauce is very thick or almost dry.
   4. Serve with rice.

Makes 4 to6 servings.

Moules Mariniere

This is my son's favourite dish as well as mine.

Ingredients

2 kg / 4 1/2 lb mussels
2 shallots
2 garlic gloves (optional, see note above)
4 tablespoons chopped parsley, thyme and bay leaves
200 ml / 7 fl oz dry white wine
150 ml water
45 g / 1 1/2 oz butter
120ml cream or creme fraiche
salt and pepper

Preparation

Clean the mussels as best as you can (best let fresh mussels soak in basin with clean water before preparation so grit and sand will fall off when they move around or something). Wash under cold water, remove opened mussels (they are dead and not fresh), discard beards and barnacles

Chop the onions and put them in a large pan with half the butter and wilt them for a minute or two.

Then add the garlic (optional), most of the herbs (reserving some as a garnish), the dry white wine and the water and bring to the boil.

Simmer for 15 mins.

Then bring the liquid up to a fast boil again and tip in the mussels. Put the lid on the pan for a few minutes, shake the pan, open and check all the mussels have opened. Discard the few that have not, as these will not be good ones.

Remove the mussels from the pan. If you cant scoop them out easily and quickly with a ladle, leaving most of the liquid in the pan, you can use a colander balanced over another large pan to drain them, catching the liquid in the pan below.

Keep the mussels warm while you deal with the liquid: boil it down for a couple of minutes and whisk in the remaining butter; check for seasoning or let individual season to their liking.

If you are using cream, stir it in now; then pour the liquid over the mussels in a large tureen, garnish with the remaining parsley and serve with French Fried Potatoes.

This recipe serves 4.

i just used the one i bought and copied it and since i am too lazy to try elastic shoulder, i used a drawstring inspiration for the neckline.

here is the original i bought:

it is rather too tight around the belly so i added two centimeters on it.

it has been a long time since I made my clothes but the other day, I found this sweet top from the shop and love it to bits! the only problem is it was a bit tight at the bottom. since i really like the design, i made my version using broderie anglaise fabric i had in the cupboard and i loved the result!

what do you think?

this is what I made last year july2006 - still using it  Smiley

I did not have time to improve the simple design because there is so much to do and very little time specially with babies and the moving, however soon I think I will work on it because it is just so cool Smiley

Just updated mine for a simpler, new look ( I can easily switch from zencart and oscommerce), there will be improvements on the site until I feel it is perfect for me.

Yes I did. I did trial & error test on cheap fabrics, adjusted the measurements & size. I am glad it came out well. I also tested many ways to close it and i think all work with the design except for a zip which i think will need extra fabric to hold it.

this one below for example have double snaps so it is possible to close the bag even if it is really full.

I've recently cut our some monograms & alphabets for a friend.
It it a bit pricy because i can only make 4 pieces for every paper as it will not cut at all without much free space to hold to.

Just want to know what you think Smiley
