Anyone heard of Butternut Squash Gnocchi? It is uber-delicious and surprisingly filling. The ingredient list and a video of the gnocchi-making are here:


This is the ingredient list as given on the website, but the video (about 6 minutes long) gives the directions.

1 Butternut Squash (About 1-3/4 Pounds)
2 Large Eggs
1/2 Teaspoon Black Pepper
1 1/2 Teaspoons Salt
2 to 2 1/2 Cups All-Purpose Flour
Fresh Sage*

*I use ground sage, plus some Italian seasoning, as well as olive oil instead of butter. Equally yummy!

This is, so far, the only way I like my squash. Smiley

Finished it! It didn't take as long as I thought it would, but it definitely came out larger than I hoped/expected. It's cozy though. Smiley

When you made your hat, did you set the size to "adult medium"?
