well, as for the paper, you could go to the craft store and buy some off of those big spools of raffia (twisted crinkly paper).  it comes in tons of colors and thicknesses.  as far as the pattern, just search for a generic knit hat pattern and follow that, but substituting paper for yarn and using an appropriate gauge needle.

my sock bunny's going to be black too, but for a more sinister reason.  i don't have any spares of my own right now, but i'm thinking it would be really easy to sneak a couple of my boyfriend's out next time he comes over to do his laundry....
