i recently "converted" to vegetarianism as well, and so far i've made a lot of really simple things - bean and rice burritos with salsa, salads with lots of veggies, vegetable stir-fry, pasta - and then i've made a few things that i would have normally eaten, only with fake meat. for example, hamburger helper (with something called... smart round, i think.), sloppy joes. breakfasts usually consist of the same things i've always eaten: cereal, peanut butter toast, waffles, or fruit and yogurt.
out of curiousity, digitalkitten, how are you doing with the adjustment? i have a hard time eating out, but when i cook for myself, it's easy as pie.
