You actually can use soymilk for boxed puddings, you just need to use less than called for.  I've tried it a few times and it's worked great for me.  I think I remember using up to a half cup less soy milk for the small package of Jello pudding, but it's been a while since I've done it, so you may want to experiment a bit.

The Silk Soymilk website suggests to use less soy milk for puddings and pie fillings (it doesn't say how much) and to add 1/4 cup cornstarch.  I've never tried this myself, so I don't know how well it turns out.

I was looking for something warm and chocolatey last night and I just happened to come across this recipe.  I used an earl grey with soy milk and all the spices except for the peppercorns (didn't have any on hand).  It was soooo good!  Next time I think I'm going to try this with a little bit of vanilla.

My first thought was flan.  I've never actually made it myself though, so I don't have a recipe to recommend, but I'm pretty sure you could find a good one online.

The sacrifice was well worth it!  The red fabric is beautiful and so are the bags.  They all turned out great.
