Deserts are my most favorite thing to make
so here's a couple for ya:Frozen Cranberry Banana Salad
1 20oz. can pineapple tidbits
5 medium firm bananas (halved and sliced)
1 16oz. can whole-berry cranberry sauce
1/2 cup sugar
1 12oz. carton thawed cool whip
1/2 cup chopped nuts
*the fruit and the nuts can be changed to whatever you fancy*
Drain pineapple juice into a bowl with the banana slices. In another large bowl, combine cranberry sauce and sugar. remove bananas from pineapple juice and add to cranberry mixture. Discard juice. Stir in all other ingredients. Pour into 13x9x2 inch dish. Freeze until solid. Remove 15 minutes before serving. Coconut Pineapple Sandwiches
1 14oz. bag of shredded coconut, toasted
2/3 cup sugar
3 TBSP melted butter
2 slightly beaten eggs
1 can pineapple tidbits
Stir together coconut and sugar. Mix in melted butter and then eggs until combined. Make 36 2 1/2" thin
rounds on baking sheets lined with parchment paper. Bake at 350F for 9-10 minutes. Once cool, spread on whipped cream and sprinkle some pineapple on half, cover with other cookie and there you go. Makes 18 but you can half the recipe if you want less.
