I just got finished making some mini cupcakes this afternoon...

They are Lemon-Rum Cupcakes (made with Malibu Coconut rum) and whipped vanilla-coconut frosting, then sprinkled with coconut on top.

Recipe (I box recipe with pudding in the mix)

-1 box lemon cake mix
-3 eggs
-1/2 cup rum
-1/2 cup water
-1/3 cup vegetable oil
-tablespoon lemon juice

Pre-heat oven to 325. Mix all ingredients together. Place cupcake liners in cupcake tin. Fill liners to about 2/3 full. Pop in oven for 15 minutes or until lightly golden and toothpick inserted in the top is clean.

The icing was a combo of one can of pre-made whipped vanilla icing, a little splash of coconut rum, another few splashes of lemon juice, and a handful of shredded coconut. No real measurement there. Mixed it all together, spread it on the cupcakes. Then I rolled the top of the cupcake in a bowl filled with more coconut.

They taste divine, and almost tropical.

My boyfriend and I made our own gourmet pizzas for dinner.

I made fresh mozz pizza. I spread ready made pizza sauce on ready made thin crust. Then I chopped my fresh mozzarella into little round slices. I chopped up some fresh basil and spread it around, then added slices of tomatoes. Sprinkled with oregano and a few other spices and popped in the oven. I think it was 425 for about 10 minutes.



Jeff made a buffalo chicken pizza. He used some precooked chicken and diced it up, then marinated in a hot sauce. Then he used blue cheese dressing and hot sauce as a base. Then he sprinkled shredded mozzarella cheese over top, and added his chicken. Did some more blue cheese on top. His was also at 425 for about 10 minutes.





My only regret was that with these kinds of heavily sauced pizzas, we should have used a thicker crust. We want to try making our own sometime. But mine was still just as tasty and a lot prettier than the fresh mozz I've had at pizza places.

My boyfriend is really into beer. He loves beer. He loves to drink it, and now he likes to make it. Since that's all I hear about from him, I figured I should get interested too.

We went to a class a few weekends ago, and I actually kind of got into it, and we bought a kit together. We made a 5 gallon batch of Wildflower Wheat on our 1 year anniversary last Saturday.

I didn't get a pic of the very beginning, but first we just boiled a few gallons of water.

Then we added a lot of liquid malt extract and 1 pound of honey.

The concoction had to boil for an hour or so. At this point I got bored and wandered away.


The entire house smelled really good. It smelled like sweet syrupy ness.


My boyfriend added in yeast and did some other things. Then it got put in a big bucket to ferment.

It ferments for another week or so and then we're going to do a secondary fermentation in a glass carboy. f I'm not mistaken, we then bottle it, refrigerate it, and enjoy. I'm excited to try it. It's going to be like Sleepytime Beer!

I added the stripe myself. And the pattern calls for a different needle size (I believe I used size 2 dpns).

This was the first sweater I ever knitted. It was made with Patons Divine and was a pattern from Patons.

It knitted pretty quickly, actually. It ended up being way too small for me so I gave it away to someone who's like a size 3.

Started these about two years ago. I had only finished one by Christmastime (they were supposed to be a present for my friend John). Instead, I finished the other glove for the next year. And he got them for Christmas in 2006. I never posted them on here.

I've just realized I had photos of some F.O.s on my computer and never actually posted them on here. This is one of them

It's just a random bag. Didn't really have a set pattern for it. I just kinda knit til I ran out of wool. It used one skein of Patons Classic Wool in a pink and brown variegated color.
