you could make a small enough knot that you could pull it through to the back or you could not make a knot at all.  maybe start with your needle at the back of the doll's head and pull your floss through to the front until it's no longer poking out the back.  don't pull so hard that you pull it through.  the extra floss on the inside of the doll should be enough to anchor the floss once you do the rest of the stitches.

Being kinda crazy, OCD about my organization, and working in a small space, I've got a place for everything and everything in it's place.

Patterns are kept in clear sleeves in a three ring binder.  Actually 2 one for my own designs, one for purchased patterns.  Then patterns are further divided by type (birds, robots, trees, etc. . .).

Hoops are kept in a hatbox.  I also keep things like stabilizer in there.

Needles are kept in their own pincushion.  Extras are kept in a needle box in the hoop box.

Floss. . . where here I've gone a bit mental. . . See?

It's all organized by color and number. 

I've been told I need help, but then again I can always find what I'm looking for!

I did a how to on Craft Stylish that might help.  It has 3 line stitches, a chain stitch and blanket stitch.  Hope it helps!
