2 packages EXTRA FIRM tofu 4 large carrots 1 Onion 2 potatoes Soysauce Vegetable/olive oil Brown sugar Rice
EARLY PREP: When you buy the tofu, freeze it. The day before you want to make this dish, set it in the fridge to thaw. This may seem pointless, but it's super-important! When you freeze tofu, especially the Extra Firm, the texture changes and it becomes much more solid. Since you are going to be doing a lot of stiring, you don't want to have the tofu fall apart and get crumbly.
MAKING THE DISH:
-Cube tofu and potatoe, chop onion, slice carrots -Boil carrots, potatoes, and onions until soft -Drain, use the water to make approx. 4 servings of rice (the water has lots of vitamins!) -Add tofu to vegetables, on high heat WITHOUT water -Add enough soy sauce and oil to thuroughly coat all ingrediants -Mix in brown sugar, to taste (I like a lot because then it sort of caramelizes everything) -Sautuee (sp?) until nice and brown -Dish up rice, and spoon tofu/vegetable mix over it
