thank you all for the replies, i will look at them carefully once again when i actually get to makin' those burgers.

now, i also need a recipe for hamburger buns. i live in kazakhstan, and maybe i haven't looked hard enough but i have yet to see the exact type of buns they use at, say, mc donald's. i know that a peace corps volunteer here made the buns from scratch, but she won't share the recipe for whatever reason:/
