The 7 Layer Burrito is vegetarian at Taco Bell. Its gooooood.

I think veggie tacos and fajitas are easy and healthy.  For tacos, I tend to use Morningstar veggie crumbles and pre-made seasoning packets, then just add whatever toppings I feel like or have around the house.  It's basic, but it works when I don't have much time for cooking.

I also recently tried this soup recipe.  It doesn't get much more delicious and healthy than that. . . and the leftovers fed me for like a week afterward.   Cheesy

I second the taco pizza! 

Also, you could try using hummus as a base instead of regular tomato sauce.  I had really good vegan pizza once that just had hummus, curried sweet potatoes, tomatoes and onions.  It sounds simple but it was delicious.

Well, my family is planning to make a traditional ham dinner for Christmas. . . and I'm hoping to make something vegetarian that could serve as a main dish for me, but I'm at a loss.  We're going to have sides like potatoes, bread, and cooked veggies, but I'd love it if I could make something a little more substantial (and delicious) that I could share with my family. 

So, what are the rest of you vegetarians and vegans making for the holidays?  Any ideas?
