I think veggie tacos and fajitas are easy and healthy. For tacos, I tend to use Morningstar veggie crumbles and pre-made seasoning packets, then just add whatever toppings I feel like or have around the house. It's basic, but it works when I don't have much time for cooking.

. It doesn't get much more delicious and healthy than that. . . and the leftovers fed me for like a week afterward.
