If you want something light and summery, I'd suggest lace - have you tried lace projects before? You could definitely knit up something blanket-sized in a simple *k1, yo* pattern every other row, or in feather-and-fan, which is a pretty basic "staple" lace pattern.

As well, blankets take effing forever - I don't know when your friend's birthday is, but you might try finding an easy lace baby blanket pattern and gifting it to her as a lap-blanket, rather than a full-sized one that would fit a bed.
