Let me rephrase.
Will they read as tall, skinny pages or wide short pages?
Does the recipe read parallel or perpendicular to the bound edge?
When reading the recipes, will the bound edge be horizontal or vertical?
I swear I'm not trying to be difficult.
Would like to know so I can consider formatting options.... I'm a big nerd.

How would the recipes be aligned on the page?
8.5" is the side or top of the recipe?

Sure thing.
Glad you're starting on something small - that's smart.
My first project was a gigantic afghan made from hexagons - all done in SC.
By the time I was done I HATED that thing.
A friend came over one day, saw it sticking out of the closet and expressed a like for it. 
I immediately boxed it up and made her take it with her.

artery, hang in there.
I started off just as you are, without anyone to ask if I'm getting it right.
Eventually, I got it all figured out - takes patience and a willingness to experiment a little when the steps aren't clear.
One thing that helped me was looking at my crochet blankets when trying to figure out how to do something.
If you're working on a block or beginning of instructions, I'd be happy to make one or two up and send them to you, if you think it might help.
Keep at it; you'll be "hooking" like a pro before you realize it.

Pickledkitty, I am so sorry this happened to you - and that you lost a treasure of crafty supplies.

Although, I must thank you for your second post where you said "as well as guard reindeer(who is now fired)" .
I laughed so loudly and hard that my cat ran away and hid.
My car holds a guard snitch in the non-ashy ashtray.

I'm going to find my cat now.

Cohr - I have that book too!  It's funny, but not entirely crafty, true. 
However, one could include the book in the package and use some of the ideas in it to be crafty. 
Like when it suggests you choose an Evil Name - perhaps make some villain name tags. 
Or the advice to "back up your genuine undead (minions) with cardboard reinforcements" maybe include some cardstock cutout henchmen.
An "evil to do" list, an eye mask, blueprints for a maze of doom, a crown for the future world ruler to wear - lots of ideas.
