I bought two dozen roses last weekend (yay sale!) and now instead of throwing them out, I figured I'll dry them. 

Do you just string them upside down on a hanger in a closet?

I'm only going to want a couple of dried flowers - the rest I actually want the petals to make a little sachet or to put in a little clear container - do you take the petals off before and then dry the petals or do you crumble  them off the whole flower after the entire flower has dried?
