I was just experimenting so this recipe only makes 6-10 cookies. I haven't tried doubling it yet.
Ingredients:
1/2 c flour
1/8 t baking soda
pinch of salt
2 t ground flax seed
6 t water
1/2 t vanilla extract
2 T honey
2 T brown sugar (I did one batch with and one without and liked both)
1/3 banana
2 heaping T peanut butter
heaping 1/4 c chocolate chips (I actually just used a handful)
heaping 1/4 c peanut butter chips
Method:
Preheat oven 350 F
Mix flax and water and set aside to get gooey (technical term there)
Mush banana with a fork and stir in the rest of wet ingredients, DON'T get distracted by the glass of wine in front of you and leave the flax/water off to the side and forget about it.

Gently stir together wet and dry ingredients until just combined then add chips.
Drop by spoonfulls onto cookie sheet and bake 10-15 minutes. Again, don't get distracted and burn them.
So confession time- I've never baked anything completely out of my head. I took notes as I was going along and made 3 batches. Let me know if any instructions aren't clear.
