These are quick and great comfort-food. I put white chocolate chunks in this batch but if you use chopped fruit instead, they're dairy-free
-Mix 1 medium egg with 2tsps vanilla extract, 1 cup of peanut butter and half a cup of canola oil.
-Add 1 cup of dark brown sugar, 1 cup of chocolate chunks or fruit, 1 cup of oats and half a cup of plain flour.
-Shape into balls, flatten and place on a baking tray.
-Bake for 15mins at 180 degrees C (350 F).
-Enjoy while still warm!
