my parents were working late tonight so i had to make dinner for the youngins.

i had 6 frozen chicken breasts, so i thawed them and seared them in a pan. i dusted them with taco seasoning while they were in the pan. while they were searing, i mixed up
2 chopped tomatoes
a dry salsa seasoning packet
a can of stewed tomatoes
and about 1/4 cup of balsamic vinegar.
i poured the tomato mixture over the chicken breasts in a pan and covered it with foil (wrap tightly, it seals in the moisture) and popped it in a 400 degree oven for about 25 minutes.

when the chicken was done, i pulled it out of the tomato mixture and put it on a plate to sit for about ten minutes (makes it juicier) and then i got two forks and shredded it.

we had the shredded chicken in tortillas with salsa and lettuce and such, and i served it with spanish rice. it was sooooo good. Smiley

this isn't directly related to this topic, but if you have red patches on your skin that clear up in the sun, you may want to check with your doctor or dermotologist about psoriasis. i have psoriasis pretty bad, but i live in arizona, so there's plenty of sun. make sure you use an spf of AT LEAST 30 when you are out in the sun and be outside for no longer than 30 minutes if you are actually "sun bathing."

one remedy i know for acne outbreaks that is also very effective for psoriasis is to crush 10-12 aspirins into about 10 tablespoons of olive oil. mix it really well and massage it into the outbreaks.

i was just at target tonight too and i saw those and threw a few in the cart. i decided at the check out counter not to get them because i didn't really like the needles and the yarn wasn't really that great of a deal anyways. but they did have a really cute coctail themed aisle-end display. it was all on clearance and so cute. too bad i don't drink and am underage... lol... (i'm almost 18!)
