You can probably make baby quilts, which is a good place to start anyways if you're new! I say hold off on getting anything bigger until you know this is something you will be doing consistently. That way, you will save some money if it turns out that you two would like to try something else.

Hand quilting is a wonderful way to really get intimate with the art of quilting. I think everyone should make at least one by hand.

If I could do it, I would organize by color in lidded bins. Alternatively, it would be fabulous to have them folded and on display in a bookshelf but the cats and/or kids would get into it.

I also lean towards the first layout with the sashing. I think the purple border helps make all the other colors in the quilt stand out.
