more importantly aside from healthy recipes do not forget to Chew your food slowly, savoring every bite. We tend to rush though our meals, forgetting to actually taste the flavors and feel the textures of our food. Reconnect with the joy of eating.

I used to live off of top ramen with an egg cracked in it Smiley.

Just made this and worth sharing  Smiley

2 cups peanut butter
2 cups sugar
2 tsp vanilla
2 eggs
Mix all together, form 1 inch balls and press with fork to flatten.  Bake in a preheated 350 degree oven only for about 10 to 12 minutes.  They will be soft when removed from oven but will firm up when cooled.

One problem is cleanup, especially when used for frying, since the oil gets fused to the pan and is really hard to remove.  I use a scrubby, the blue one that is safe for non-stick because I don't want to risk scratching the pans, but these aren't really abrasive enough to remove all the burnt on grease. And the marinade sticks to the pan when stir frying seems to bake the marinade on, then it slowly peels off during the cooking and you get these little black specks in the food. Not pleasant at all  Sad

Love avocados heres mine for the taking

Avocado Salsa Ingredients:
 2 small red peppers, seeded and finely chopped
 1 ripe avocado, diced
 1 short cucumber, finely chopped
 1 small red onion, finely chopped
 1 tbsp coriander leaves
 2 tsp fish sauce
 2 tbsp lemon juice
 4 tbsp olive oil
 1 lime

Method:

In a large bowl, add avocado, cucumber, red onion, peppers, coriander, fish sauce, lemon juice and olive oil. Chop lime segments and add to the salsa. Mix well. Serve with grilled fish or chicken.
