I just had to come and share this recipe for the best stew in the world since Im waiting for my pot of it to finish cooking.
Ive been making a pot of it every week for about 2 months....
3 carrots, sliced
1 small onion chopped
3 cloves garlic chopped
1 can veggie stock
1 can diced tomatos, drained
1 zucchini, sliced
1 can balck beans, drained and rinsed
1 can great northern beans, drained and pureed
1 cup frozen peas
2 t. oregano
salt & pepper to taste
Spray a large sauce pan with the cooking spray and saute carrots, onions, garlic, and zucchini for about 5 minutes on medium heat. Stir in stock, tomatos, black beans, great northern beans (pureed), peas, and seasonings. Heat to boiling. Then reduce the heat and just cook until the veggies are tender enough for your liking.
