I used the Pam Gross basic man pattern for the body and face. The basic doll has an inner body of stuffed muslin which is them covered with a skin of cotton lycra. You sculpt the face with rolls of stuffing that you place between the two layers to make cheekbones, brows, ets. So you can shape the face pretty much however you want.
I attached the hair with a felting needle. It took a while, and you have to jab around in different directions to get the hair to hold, but the end result was pretty good. If you go this route, just be careful with the felting needle. It REALLY hurts when you stab yourself with one of those! (I'm speaking from experience here.
