1  COOKING / Recipes and Cooking Tips / COMPLETED: Fall Challenge: Jalapeno Poppers - Tempura Style! on: October 30, 2010 08:10:07 PM
I love to make this appetizer because everyone loves it. It's a spicy, cheesy delicious bite! It may seem like a lot of steps but it's easy (and totally worth it) to make!

Jalapeno Poppers Recipe

Ingredients:

8 jalapeno peppers
Panko crumbs/Japanese bread crumbs (or use regular dry bread crumbs)
Oil for frying

Filling:
4 ounces cream cheese
1/2 cup shredded cheddar jack cheese
1 tsp garlic powder
1 tsp onion powder
pinch of salt

Tempura Batter:
1 egg
1 cup COLD water
1 cup all purpose flour

Instructions:
1. Slice jalapenos in half lengthwise and remove stem and seeds (use gloves!!)
2. Mix filling ingredients together.
3. Fill jalapeno halves with filling.
4. Prepare tempura batter by mixing the egg with cold water, then whisking in the flour.
5. Dip filled jalapenos in tempura batter then dip/roll in breadcrumbs, immediately drop into hot oil.
6. Remove when golden brown and let cool on paper towels/wire rack.
7. Enjoy warm!

(use up extra tempura batter with other veggies like eggplant, sweet potato, peppers, etc)

Swappers who need a Replacement Partner:
Alchamy513  - Replacement partner: bellyjewel
(from Bloomfield, NY)

Her questionnaire:
-Do you have an allergies? Flowery scents, mold, dust
-Are there allergens in your home? (pets, dust, mold, smoke?) 5 cats, 2 dogs, 2 smokers (not me though)
-What crafts do you do or plan to do for the swap? Crochet (I do mostly amigurumi but can do most anything if I try hard enough!), jewelry (mostly pendants), some woodburning, some (very little) knitting
-What type of crafts would you like to receive? Anything! Especially something I couldn't make for myself. Also, I loved stuffed creatures, the weirder the better!
-What would you rather not receive? Nothing really, I like decorative stuff or useful, anything is good!
-Shoe size? 11 womans
-Shirt size? XL womans
-Favorite Color? Black, red, dark orange
-Ears Peirced? Yes! I'm not really allergic to metals, but if I wear cheesier metals I can't wear them very long... this is only in my ears
-Anything Specific you want or don't want? Nope!
-Do you have some way of getting to know you better? (wist, blog, etc?) wists.com/Alchamy513 I don't have anything Miyazaki specific yet but I am looking!
-Are you planning on crafting more than the bare minimum? I can, I usually just do what comes to mind and pretend it fits the size requirements
-Other than Hayao Miyazaki, any themes, colors, etc. you're really into? Pretty much just the colors stated above... and I love steampunk stuff, I can see a lot of that stuff from some of his movies, like Castle in the Sky, Howl's Moving Castle, Nausicaa, etc...
-Other than not Hayao Miyazak any themes, colors, etc. you're really NOT into? No pink! Also, I don't like pastels or plaids
-Favorite Hayao Miyazak film so far? More then one? Thats okay. I LOVE Howl's Moving Castle, I also like Castle in the Sky, Nausicaa and the Valley of the Wind, and Spirited Away. I was also asked to put that my sister is obsessed with Kiki's Delivery Service (although that's about the only movie that she likes from him!)
-List one or two quotes you've come to love ( and there source, please!)
-Dola: [escorting Sheeta toward the galley] Gotta start talkin' like a real pirate!
Sheeta: [nervously] I've been practicing! Um... Harrrrr, matey! Shiver me timbers!
   Dola: [not impressed] Keep practicing...
      (Castle in the Sky)
-Louis: As you can see, this room is loaded with all sorts of gears and gizmos!
Pazu: [fascinated] Wow, this engine room is amazing!
Louis: [dumbfounded] Is *that* what it's called?
      (Castle in the Sky)
-Curtis: [taunting Porco] If you run away, I'll tell everyone you're chicken!
Porco Rosso: Chicken, pig, what's the difference?
      (Porco Rosso)
-Howl: You're wearing that hat? After all the magic I used to make your dress pretty?
      (Howl's Moving Castle)
-Old Sophie: All right Calcifer, lets get cooking.
Calcifer: I don't cook! I'm a scary and powerful fire demon!
      (Howl's Moving Castle)
-Calcifer: Here's another curse for you - may all your bacon burn.
      (Howl's Moving Castle)
-Favorite Scene? I like the scene in Howl's Moving Castle (actually, this happens in a few movies) where Sophie is sleeping and she turns back to herself. I like how someone's true form is hidden due to their own force of will and not the actual spell.
I also love the scene where Howl's hair changes color and he throws a fit
-Anything you'd like to share to help either me or your partner? Um, if you make wall art my room is dark orange... I also LOVE the pirates in his movies! Especially in Castle in the Sky and Porco Rosso. Actually, I don't know if they are in any other ones...
5  COOKING / Dessert / Cooking Challenge - Celebrating July 4th!- Fourth of July Cherry Pie on: July 08, 2010 05:19:53 PM
I made a cherry pie for this contest! While I think apple pies are more American, cherries are summer fruit so it's more fitting for a July 4th dessert. Plus, there's that fable of George Washington chopping down his father's cherry tree. The moral of the story? It's good to tell the truth! And here's a truth I learned while making this pie, pitting cherries are a lot of work if you don't have a cherry pitter (plus they stain your fingers).  Tongue

I decorated the top of the pie with an American flag to be festive. The stars and stripes are hand cut! Here's the pie before baking:

Fourth of July Cherry Pie

Ingredients:

Filling:
1.5 - 2 lbs sweet cherries, pitted
1/2 cup sugar
1/4 cup water
~2 Tbsp corn starch

Crust:
1 1/4 cup flour
1/2 tsp salt
1 tsp sugar
8 oz (1 stick) butter, cut into cubes and chilled
~5 Tbsp ice water
1 egg, yolk separated

Instructions:
1. Using a food processor (I used my fingertips because I don't have a food processor), pulse the cold butter pieces with the flour, salt and sugar until it looks like soft bread crumbs.
2. Add the water 1 Tbsp at a time until the mixture sticks together when squeezed.
3. Form into a ball and use immediately or wrap and refrigerate. If using immediately, roll out into pie dish or press into tart pan. Brush crust with egg white and refrigerate until needed. Save about a handful of dough for decoration.
4. Mix all filling ingredients together in a medium pot. Heat on medium-high heat until mixture thickens. Remove from heat and place into crust.
5. Using saved dough, roll out and cut stripes and stars. Place onto pie. Mix the remaining egg white with the egg yolk and brush onto dough. Sprinkle top of pie with sugar.
6. Bake at 375 F until top is golden brown and filling is bubbling, about 30-45 minutes.

And here is the pie after baking:

It was delicious! I hope you like it!
