1  COOKING / Dessert / Plum Dumplings! on: March 16, 2005 09:36:20 PM
Well I'm a Hungarian so my family eats A LOT of Hungarian food.  One of my all time favorites is szilvas gomboc (aka plum dumplings).  These are delicious and great for desert, breakfast, and snacks all day.  They are just AWESOME, and super easy to make.  Keep in mind that all of these ingredients are approximate - some people like more dough, some like less.

What you need:
-About 16 plums, pitted.  I've used both canned and fresh, either works.  But if you use fresh I suggest more tart tasting ones.
-3 to 5 medium potatoes
-4 cups flour
-1 egg
-1 tsp salt
-sugar cubes (enough for all of the plums)
-bread crumbs

Preparation:
-Boiling water for potatoes
-Large pot of boiling water for dumplings

To make it:
1. Peel the potatoes and cook in boiling water until soft (this first part you're just basically making mashed potatoes)
2. Mash the potatoes up and add salt and the egg (DO NOT add any milk to the mashed potatoes, my dad did this once and it wasn't good!)
3. After those are well mixed slowly add the flour
4. Roll the dough out to about 1/2 inch thick (keep in mind that how thick the dough is is totally up to you - some prefer less doughy dumplings)
5. Cut into squares of roughly 4 inches
6. Place a sugar cube inside of each plum where the pit was
7. Place each plum on top of a dough square, and wrap the dough around the plum, roll it in your hands to get a good shape
8. As you finish each dumpling place it inside your large pot of boiling water, when the dumplings are done cooking they will float to the top - no need for timers!
9. Pour about 2 cups of breadcrumbs in a large frying pan and turn it on medium-low heat.  As the dumplings float to the top place them in the pan of breadcrumbs.  Roll them around to cover the whole thing.
10. When each dumpling is covered with breadcrumbs place them on a place for serving and pour the remainder of the breadcrumbs over them.  Sprinkle a mixture of sugar and cinnamon for added sweetness.

The best thing about these is they keep for days, and they don't have that rich, sweet dessert taste.  You can literally eat them with every meal!  Hopefully some of you will try this out and like it.

ohhh THATS what that was.  A friend of mine from Japan once brought all these little rice balls to a potluck cast party and we all loved them, but I had forgotten the name.  Now I can make them!

quesadillas
put a large tortilla in a frying pan, over medium heat.  Spread it with a *thin* layer of refried beans (or use leftover meat of your choice, I've even successfully used that wierd canned chicken) sprinkle with a good layer of shredded cheese (mild to medium cheddar or jack are both good choices) and add some salsa.  Cook till the cheese starts to be melty, then top with another tortilla and flip it (carefully).  Cook for a few more minutes (till the bottom tortilla is browned). then slide it onto a plate.  Wait a minute or two before cutting into wedges.  Dip in salsa, sour cream, or guacamole if you're feeling fancy.

Oh I love quesadillas, they are my ultimate food for one.  Try some of those frozen shrimp in it sometimes - it's delicious.  Also, try adding things like avacado and onions inside of the quesadillas, the flavors all melt together and taste awesome.

A big thing to losing a few extra pounds is cutting out sodium intake.  Salt/sodium retains water which makes you bloated, and while your body needs a certain amount, it gets all it needs from the foods you eat daily.  Stay away from any potato chips (obviously) and even most canned soups - they're really packed with sodium. 

Start trying to drink as much water as possible.  Doctor's reccommend 8 glasses (that's 64 ounces) a day.  I have a 32 ounce water bottle, so what I do is I always refill it at night and keep it by my bed.  Then when I wake up the next morning I'm always thirsty, so that's a great time to drink some water - it also helps wake you up.  Then I just keep drinking my water throughout my time getting ready for school, and I finish the 32 oz before I leave.  Then I refill it, and during the rest of the day I just keep drinking it until I'm done with my whole 64 ounces.  Also, sometimes you think you're hungry, but you're actually just dehydrated, so water will help lessen your appetite.  AND as an added plus, drinking so much water will help clean out your body and do WONDERS for your skin.

Try taking atleast a short walk every day.  Maybe get someone else to do it with you, that way you guys can help eachother stay on track. 

Finally, try to eat a big breakfast.  It's almost impossible for me with school to eat a full breakfast, but I do whenever I can.  I try to make breakfast my biggest meal, because then you get all the energy you need for the day and are less likely to get hungry and overeat later.

Use Castor Oil.  Put it on after you get out of the shower when your skin is still moist, that way the water on your face will help dilute it a little.  It's also great to get off makeup, in which case I poor a little onto a wet washcloth and whipe my face with it.

Ooh I love this stuff!  I just tried it today....  I mixed table sugar with extra virgin olive oil (enough to make all the sugar kind of mushy), and then when I was in the shower I mixed it with a little Dr. Bronner's castile soap.  It was really foamy and exfoliated great.
