I wrote the content for all of the books except the three by JK Rowling (Fantastic Beasts, Tales of Beedle the Bard and Quidditch Through the Ages). I gathered info from various Harry Potter fan sites on the internet and did a lot of editing. I thought I knew the books pretty well but I was amazed at how much I learned!
LA-Fairy: I used a software program called ClickBooks to do the printing. It handled the pagination and everything very well. It did take some struggling at the beginning to learn how to use the program but once I figured it out, it did a great job.
I did write up a description of my process on instructables.com when I entered a contest. It has links to tutorials on how to make the various types of books. It doesn't have step-by-step photos since I wasn't planning to do that sort of thing but I did try to explain it as best I could.
