Mmmm! I love these things, what a great idea!
When I saw these macaroon recipes (links below) I knew I had to try them out. I have a monstrous sweet tooth but am trying to curb my intake of sweets.
 
After trying out the blond type, I decided that everything is made better with chocolate, so here's my updated recipe.
These were decadent and creamy--definitely did not taste as though they were 'healthy'!

My Chocolate'd Version:


2 & 2/3 cups of shredded unsweetened coconut to make coconut butter (or 1 cup of pre-made coconut butter)
2 tsp vanilla extract
1 tsp almond extract
1/2 teaspoon coconut extract (optional)
2/3 cup maple syrup
1/3 cup agave nectar
3 tablespoons cocoa powder
1 1/4 cup shredded unsweetened coconut
1/3 cup psyllium husk
1/2 tsp sea salt
Parchment paper


Mix up the coconut butter, vanilla, almond, coconut, maple, agave, cocoa, coconut and sea salt. At this point the mixture is relatively thick, so it can take a strong arm to get the psyllium husk mixed it but it is well worth it. Psyllium really ups the fiber in these cookies!

After mixing in the psyllium I scoop my cookies with a cookie scoop and bake at 300 degrees for 20 - 25 minutes, but checking regularly at the 20 minute mark as not to burn them.




Also, I found that eating the batter with a spoon was another fine method of bringing chocolate and coconut to my belly.
