My name is Jennifer aka KitokoMingi (Lingala nickname given to me by my Congolese hunny, lol, means "very beautiful").

I'm an EMT, in school now for paramedic and I'm working on my pre-reqs for RN.

In my free time (is there such a thing anymore???) I make jewelry, sew, paint (on silk and canvas), read, write, cook, and do various other crafty things. I have to stay busy, lol.

I share a home with my hunny Robert (I call him Gambala na ngai, "my hyena", lol), an African (of course!) bullfrog named Djouna, a Mexican black kingsnake named Frank, a lavendar albino kingsnake named Princess, and a pair of Angolan pythons named Connie and Victor. Our little home is also occupied by my growing collection of plants, Thai plumeria, African adenium (desert rose), various palms, ivy, ginger, pothos, and of course there are the veggies Malabar spinach, tons of peppers, squashes, tomatoes, and my 3 huge sunflowers that are about to bloom. Cheesy

I LOVE craftster and am so happy to be a member now. Cheesy

This is a keeper (kinda like most of the stuff I make, lol!!!), I get so attached to my crafts. Cheesy

African bloodstone, lapis, snowflake obsidian, and some pink/grey stone I can't remember, lol, the elephant is carved from a similar stone, yep, I don't know what it is either, lol. Roll Eyes

Super easy and delish!

1-Package of Thai Laab seasoning/spices
1 1/2-2 lbs. ground pork (or chicken, beef, etc)
Chilis to taste (I like a lot!)
Lime to taste (LOTS for me!)
Cilantro to taste (see above, lol)
Onions (I used pickled onions in mine)
Romaine lettuce
I also added some pickled banana wax peppers from my garden Cheesy

Brown the meat, add the spices, toss in the chilis, cilantro, and onions..... serve with Romaine (you can eat it like a lettuce wrap or chop the lettuce and have a salad)

Any Asian food store will probably have the packet of Laab seasoning/spices, that's how my Thai momma taught me to make it, lol.... You can make it from scratch though of course, there are lots of recipes for the spice mix online. Cheesy
Enjoy with a tall cool glass of iced Thai tea...... pure heaven!

I LOVE pickled eggs!

The balsamic one looks crazy yummy. Cheesy I have got to try that recipe out! I never would have thought of using it before.

I made some recently with Thai seasonings, lime, and cilantro..... They were killer, but too spicy for my hunny, lol. Roll Eyes

The hardware and strap were scavenged from my old beloved Roca Wear purse that finally fell apart, lol. Tongue
