Were the two carboys of different color ciders from 2 different mashings? That is curious. I've never seen that before.

No, the two carboys are from the same batch, although we weren't totally precise in our blending, so some random "neighbourhood apples" that we scrounged got added to one batch and not the other.... but I'd say that for the most part, the apples were the same, mostly from our mini orchard.

We're not entirely sure - the trees on the property are (obviously) older than any of us. My brother said he had someone in the know over once, who seemd to be able to identify a couple of trees as Gravenstein's... but there are at least two other varieties we're not sure of.

the cider should be completely ready for consuming in 5-6 months (from the start of the process) So we should be drinking it around the end of january-february.
