These look so good! 

One question though:

Does the filling have to be refrigerated?  I'm making my cookie list for Christmas gifts and I'm not so sure these will hold up after long periods of room temp sitting.

Any ideas?

Okay, this is the best.  I can't remember where I first found it, but I think it may have been on the Food Network.  Good stuff.

Anyway, here goes:

2 large Spanish onions
1 stick butter (salted)
2 tablespoons olive oil
1/4 teaspoon cayenne pepper (or more if you like it spicier)
1/2 cup mayonnaise
1/2 cup sour cream
4 ounces cream cheese, at room temperature
salt and pepper to taste

Halve the onions and cut into very thin (1/8 inch) slices.  In a large frying pan, heat the oil and butter at medium-high heat until butter is melted.  Add the onions and cook for 10 minutes, stirring often.  Add salt, pepper and cayenne to your liking (remember, this is the only seasoning in the entire recipe).  Turn the heat down to low and cook onions for another 20 minutes until caramelized.  Remove from heat and allow the onion mixture to cool completely.

In a standing mixer (or with an electric beater) mix the sour cream, mayo and cream cheese until well combined.  Fold in the onion mixture until all ingredients are well blended. 

Refrigerate and serve with chips.


This is so good with any kind of chips (I prefer Kettle chips), but it's also good on sandwiches and I'm told it's especially good on burgers.

Oh, and it lasts about three to four days in the fridge.  If you can make it a day ahead of time, it's especially good if you let the flavors hang out together overnight.

I would really like to cut upholstery fabric and wool felt into circles (of different sizes), but I'm trying to think of an easier way than to trace onto the material and cut with scissors.  I've seen round punches at the craft store and wondered if anyone has tried cutting fabric with them.

Have any of you tried this?  Think it would work?  I'm concerned that the blade would dull rather quickly.
