The first word to pop into my head when I hear basil is Pesto, which I love to use as a toasted sandwich spread.

yep! Pesto is awesome. I like to eat it straight on pasta or gnocchi with veggies.

It also works great as a sandwich spread

I do about 3 1/2-4 cups basil, 5 or 6 cloves or garlic and olive oil and pine nuts, and 1/4 cup nutritional yeast (if you have some, it's optional)

This soup looks really good, when it gets colder I might try it out.

Soy in big doses is hard on me too. You should definitely check out the other types of non-dairy milks out there though! My personal favorite is almond, but there's also oat, rice, hazlenut, hemp, and a ton of others.
