Do you have access to fresh goat milk CLM? What I use is basically a cow's milk cream cheese recipe but swap out for goat milk and use half the rennet. That one requires a cheese culture and chevre molds.

Since it's just coffee and water, I'd imagine it would keep about as long as a simple syrup which I've kept 2-3 weeks in the fridge. Just watch for mold inside the container lid. Of course, you could add a little vodka to help extend the shelf life.
