So, I've seen a lot of recipes online for a "5 Minute Chocolate Mug Cake". Being the chocoholic that I am, I HAD to try this. Many people said it was coming out rubbery, and just plain nasty. I concluded that this was due to overcooking. I combined several of the recipes, and came up with this:
4 tbsp flour
2 packages of hot chocolate mix (I only used 1, but will use 2 next time)
1 tsp baking powder
a pinch of salt
3 tbsp oil
3 tbsp milk
3-4 tbsp of finely chopped chocolate (I used Dove dark chocolate)
I used an extra large mug (about 5 inches in diameter), mixed the dry ingredients, then added the wet and the chocolate.
Then microwave for 1 1/2 minutes, let stand in the microwave for about a minute, nuke 30 more seconds.
Let stand 1-2 minutes, and voila!
It was very good! Not wonderful, but definitely good, and perfect for a quick chocolate fix. All it needed was a bit more cocoa and sugar, which is why I said to use 2 hot chocolate packages instead of just one. It was yummy, and I'll certainly make it again.
