This is my favorite tofu dish:
1 lb firm tofu, stir fried until lightly brown (olive oil or vegetable oil work fine). Add in as much broccoli and baby spinach as you want and steam it (covered) with water and soy sauce (Mrs. Dash and minced or powdered garlic are good too) until the spinach is soft. This is a good dish, even for non-spinach-lovers.
