I also love my crock pot, I actually have two of them! The two things that I love to make the most in them are Hawaiian Pork which is a big roast, we rub ours with black salt and liquid smoke, wrap it in ti leaves (you can get them from most florists), then foil and let'r go! The leaves (you can also just use foil if you like or can't find the leaves) keep a really nice moisture next to the meat and that liquid smoke is MAGIC. If anyone wants the actual recipe, I'll chase it down.
For desert, my favorite (which seriously has the ugliest name) is Dump Cake. You literally dump in a few things, swirl with a wooden spoon and put the lid on. In a few hours, you have this scoopable, moist cake that is TO DIE FOR and goes great with a scoop of vanilla ice cream. It's so good it'll make your eyes roll back in your head.
Now I want to go home and start a dump cake
