It's been a while since I posted anything here so time to break the silence

I made these besan dosa last night and they were so tasty it seems wrong to keep the recipe a secret! They're gluten free as they're made from gram flour, which is from chickpeas or split peas instead of wheat; completely vegan, and super healthy...but the reason I made them (being neither coeliac or vegan) was that they taste amazing!

I used courgette but you could use any sort of veg I think - spinach would be good, any other sort of squash, even broccoli or cauliflower at a push (but it would need to be chopped up small!) And you could always leave the veg out if you prefer.
Ingredients:
135g gram flour
35g brown rice flour
1/2 tsp salt
200g water
1 tsp garam masala
1/2 courgette, grated
Mix all together into a thick batter, heat a flat griddle, and cook like pancakes - simple! The full recipe and more pictures are on my blog
