So yesterday I began my Adventures In Canning (tm). On Saturday, I went and picked 3 pounds of blueberries and a bunch of black raspberries and the raspberries were my first victims in my adventures.
I used a combination of various recipes I found online, but basically:
4 c smushed black raspberries
2 c sugar
2 T pectin
1 lemon (juice and zest)
Various steps (excuse the fact that they're out of order): From L-R, putting on lids, testing to see if its set, bottom: all of the ingredients beginning to cook.
When we were done, we had 11 little jam jars full of black raspberry jam. I loved hearing the little pings as they vacuum sealed themselves!
And of course, the best part of canning is eating it!
It was so yummy and I'm totally hooked on canning!
I haven't decided what I'm going to make with the blueberries yet, but mmmm, are they good.
