As for the embroidery itself, you could do this easily with a split stitch. It's a stitch that is very easy to learn and handles little tight curves very well.

Are you going to do this in just black and white or are the roses going to be red? It would make a great contrast if you did.

Try felt crafts. Low cost, low stress and low mess factors. Felt is very forgiving to work with and very versatile. She could do holiday ornaments which are small enough projects that it also wouldn't take forever to make. Smiley
