Great idea to keep broccoli slaw on hand, Mare. I just got a bag of that for the first time a few weeks ago. It lasted a long time and I did find a lot of uses for it.

I absolutely hate throwing produce away! I try to use things up before it goes bad but sometimes I miss something hiding in the back of the veggie drawer Smiley.

Does anyone have good tips for making produce last longer?

- Any themes/colors I should be sure to avoid?

- What have been some of your favorite things that you've received in prior swaps?

- Is there anyone in your family that would like to receive something (assuming you want to share Smiley)? If so, what might they like?

- Do you have a pinterest or etsy favorites or anything similar where you store wish list or inspiration items?

- Anything else I should know that will help me guarantee I make something you like Smiley?

It really is super easy! We even had it for dinner the other night with a green salad Smiley. Sometimes breakfast for dinner is fun!

I think it would also be good with salsa and cheddar or pepper jack cheese.

There is a great breakfast place a few blocks from our house that serves the best baked eggs! It's so good, in fact, that the wait is upwards of an hour on the weekends. I crave their yummy dishes but, aint nobody got time for that! I'm also currently OBSESSED with my veggie spiralizer. This dish is the result of both factors.



It takes less than 5 minutes to put together and doesn't require many ingredients. Oh, and it tastes good Smiley.



- eggs
- zucchini
- marinara sauce
- crumbly cheese (feta, goat... whatever)
- heavy cream
- salt & pepper
- green onions or chives (optional)

Preheat the oven to 375 degrees.

Grease up a ramekin and set aside.

Spiralize a zucchini (or you can just slice it) and make a little nest in your ramekin.



Crack in 2 eggs and add a couple of big spoonfuls of marinara sauce.



Add a splash of heavy cream and sprinkle with cheese. Hit it with some salt and pepper and pop it in the oven!



Bake for 15 minutes. If you don't like runny yolks, give it more like 20 minutes. If you want to be fancy, add some green onions or chives and enjoy (after it cools down Smiley!

There really are some wonderful partnerships and some great dancers still left to pair up! I'm certain that this is going to be a special gallery.

petskin and I chatted about swapping in the last IYP but the timing wasn't good for me. I'm thrilled that we get to dance this round though!! I'm bursting with ideas!!
