W00T!!!!! I can not relate to you how long I have searched for some who has done a project like this!!!! well I say that, I have seen many people who have attempted this... But they all.... let's just say they looked quite like someon ewent crazy with some blue cloth and scissors. Your's is the perfect design, color, fabric, Everything!^^ Thank you so much for posting.

I have never really done anything much in regards to vegetarian but ever since the doctor said my grandfather had diabetes I have been trying to get him to eat healthier. So, LOW, I started researching. I found a cook book, From a Monastery Kitchen, that has some really great recipes. I tried this one and it turned out delicious!

 1 cup lentils
 1 cup brown rice
 olive oil
 1 large onion, sliced
 2 tomatoes, chopped
 2 garlic cloves, minced
 1/2 peeled diced egg plant
 1 green pepper, diced
 3 Tbs minced parsley
 1 ts thyme
 2 eggs
 1/3 cup milk
 1/2 cup bred crumbs

Time to get cooking!:
     Preheat oven to 350 F

    Rinse lentils. Add the lentils, rice, and 2 Tbs olive oil to 4 1/2 cups water in a heavy sauce pan. Cook over medium heat until they are well done and all the water is absorbed and evaporated.

    In a large skillet heat 4 Tbs oil and gently saute onion, tomatoes, garlic, egg plant and green pepper untill they turn golden. Add parsley and thyme and stire for 1 or 2 minutes.

    Beat eggs in a large bowl. Add milk, bread crumbs, salt, and pepper and beat some more. Add the lentils and sauted vegetables and mix together until all ingredients are completely incorperated. Pour into a well greases loaf pan and bake at 350 F for 40 to 50 minutes. The loaf is done when all liquid is evaporated. Serve hot. 

                                                                              serves 4-6

I hope everyone enjoys this recipe. I know my family loves it and I do believe it is a bit healthier than a big slab of ground beef. However, to make it more like a meat loaf I mixed in some ketchup and dried onion pieces, but I think it only made it tast like sweet vegetables. Other vegetables can be incorperated into this recipe like 10 mushrooms sliced and added to the sauted vegetables. I would stay around softer vegetable.
