I made this for dinner last night and I just kind of "cleaned" out the fridge.
1 lb chicken thighs- fat trimmed
about 1/4 cup fennel stalk diced
handfull of fresh (not dried) shitake mushrooms
1 tblspn lemongrass
1/2 cup nappa cabbage
some red bell pepper (it needed color)
and of course green curry paste..that you just do to tast..I used half the jar:)
I sauteed the chicken with some sesame oil and fish sauce, cooked until it was done and added everything else. Let it cook about 10 minutes or so and laid that yummy stuff on top of some Jasmine rice and it was one of the best quick meals!!
