I feel like I'm horribly out of season. Its summer and right now I'm making stuff that people usually make in the fall. Like cranberry sauce and pumpkin bread. Don't get me wrong, those are great year round, but I feel like my "cooking clock" is a little off.

Though I found that I LOVE this stuff on bread with cream cheese. It has been my hugely addicting breakfast this whole past week.

I also love the fact that its more tart than store bought types, AND it has nice big chunks of cranberry in it. I think I have found cranberry nirvana.

I've put it on bread with cream cheese and turkey sandwiches, what else can do you put it on?

Whenever I have ice cream, I feel as though I MUST have hot fudge to top it. And in my neurotic "I make everything from scratch" mode I decided to make my own!

I tried to make it once before but I didn't know that corn syrup was the culprit for making it that delicious chewy texture that hot fudge gets when it hits the ice cream. The first time I made it, it ended up more as a ganache and slightly gritty somehow. I'm not sure since I didn't add sugar to it.

I have to admit that the smell of bubbling gooey chocolate is one of the most intoxicating smells I've ever had going in my kitchen.

The recipe calls for unsweetened chocolate, which I had never had before. I also forgot to warn my husband that it doesn't taste good, so when he stuck his finger in the bowl I used to melt chocolate after it was done he made a very upset face.

Its so good that I generally had a little ice cream to go along with my bowl of hot fudge. Smiley

Do you notice that after cooking at home for so long you start to loose the taste for things bought already made from the store?  I really noticed it when I was craving some coffee cake and bought some at the store. I ended up not eating it! I was so mad. My husband ate it though, he was such a trooper *rolls eyes*

I find cooking feeds my soul, so I decided to make my own coffee cake since my soul was a little beat up after work.

I was going for something to the effect of the Entimens (sp?) cream cheese danish with some fruit. It turned out incredibly well, I had found the recipe sitting on my hard drive of things I need to eventually make.

It has a slightly sweet topping, with a layer of cream cheese and raspberry ooze (cooked raspberry and made thick) over a delicious cake. Oh my. Love. Especially warm. LOVE IT WARM. Because then the cream cheese and berries are all ooey-gooey and mouth watering.

Here is my issue though. My husband thinks its very tart, I think its overly sweet (very sensitive to sugar since I don't eat it often). What ways can I make it not AS sweet or not use quite as much sugar without using artificial sweeteners? No Stevia either.
