When I make it at Christmas time I have a similar recipe, I use orange juice instead of apple juice, and I like to throw in a little bit of cinnamon as well.  Yum! =D

I think cheddar and some sort of apple preserve might work.  I always thought it was odd, but when I was growing up my Nan had a little saying. "Apple pie without the cheese is like a hug without the squeeze" ... Although I never have tried apple pie with cheese!
