Asked mom what she wanted for Mother's Day dinner...She responds ice cream cake! Ugh. Luckily for Christmas she'd gotten me one of those Betty Crocker cake pans, so I put it to get use.
I used my favorite cake recipe (below from Food Network), but after the freezings it was though the cake was too dense (but I didn't want to use the Betty Crocker [are you as surprised as I am?] mix). I chose to stuff it with strawberry
ice cream (cheapest kind I could fine as it only took 1 pint). It was my first attempt at using the whole bag decorating thing.
This was surprisingly easy to make, but I regret not making the icing as well.Yellow Cake:
12 tablespoons (1 1/2 sticks) unsalted butter, softened
1 1/2 cups sugar
2 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
3 large eggs and 1 yolk for the egg whites
3/4 cup milk
2 teaspoons vanilla extract
