1  COOKING / Dessert / High tea cupcakes on: May 26, 2009 03:05:50 AM
I made these cupcakes recently for a friends high tea party!

Blueberry Lemon Cupcakes, with Lemon Curd filling, and Cream Cheese Frosting

Dark Chocolate Pistachio Cupcakes, with Dark Chocolate Ganache filling, and Ganache Butter Cream Frosting

I used a 10ml syringe (a sterile one from work) to inject the filling.

I used a Wilton piping tip for the Cream Cheese Frosting....sorry I can't tell you which one, I'm house sitting and I can't for the life of me remember which one I used at home!

The recipe for the Blueberry Lemon Cupcakes is on my blog! http://www.apparentlyjessy.blogspot.com
2  COOKING / Dessert / More Easter Cupcakes! on: April 15, 2009 06:17:17 PM
I made these cupcakes for Easter this year, and I am just so gosh darn proud of them I had to share! I made a batch of Magnolia vanilla cupcakes, with a tiny dash of almond essence.
The toppers were inspired by a vintage Easter card, I printed the rabbit, and traced it, coloured them in, then put cardboard backing on them, they are held with a toothpick.
The icing was really easy, just green butter cream frosting, with green sugar crystals. I then piped butter cream grass and added my miniature fondant flowers, and chocolate speckled eggs. The fondant flowers did take a long time to make.
