Easter cake, made with help from my mom.  I was teaching her that fondant isn't actually all that hard!

and my simple birthday cake, made by me Smiley  it's a sponge cake with 2 cans of chocolate betty crocker lol  yes thats the top of the straw i used to hold the cake from sliding..... hey, it was just me the kids and the hubby seeing this one.  I was being lazy lol

 6 layers of yum!

enjoy!  I know my butt grew a few inches this week.....  Tongue

yay!  here are the pics of the fantabulous things Jexxican made for me!!!

For National Bake Week, an apron and a super special cookie recipe, which I can't share with you, because it's a special recipe for her sisters ALSA charity!!!  So go get one, I'm certain they are good, but once I make them, I'll tell you all how delicious they are!

For D.E.A.R. day, a paper back book cover.  It is currently keeping a copy of The Simillarion by JRR Tolkien warm Cheesy

And finally, for Stress awareness week (or day? or month?.. well, the whole year should be dedicated to stress awareness Wink )  A lavender scented rice pouch  and a squishy hand I can squeeze when I'm needing to work out my stress!   When that hand fell out of the box, I was like O.o??  but oooooh I get it after I figured out which day it was lol

Again, thank you so much Jexxican!  Can't wait to get baking those cookies in that apron, and shortly there after laying on the couch with a good book, all snug in it's cozy, with a warm rice bag at my neck!!!

I can finally share pics of the little skien I did, since it went to its new home Smiley

Hairball (it was for Hairball awareness day Wink )  it was fun to spin up.. It's Luster wensleydale locks and misc goats fleece.... not 100% sure what kind of goat, but a goat none the less!  theres not much, but it did fill my bobbin, it's just chunky and hairball like!

oh and I love that ball o yarn Myklia! wonder if its coming my way.... Smiley

Thread catcher at the sewing machine:

Back side of the catcher over the side of the chair (it looks the same as at the sewing machine on the chair on the front, so I figured it needed only one pic)  Like my sexy wall paper and chair in the basement? very 70's..... its chic  Tongue

and the reverse side (or is this the back side and the flowered bit something else??  my brain is fried today) I love this fabric... so glad to have it in pink so I can make another one of these for me!!

Can't wait to get who this is going to, I'll be adding some treats, and maybe just maybe a surprise crafty item....

335  Empanadas! with pic ffffffff-at tutorial! in Recipes and Cooking Tips by Belladune on: March 21, 2010 05:22:26 PM

When I was a child, we would go over to a friends house and would be served empanadas.  I have fond memories of running around on Saturdays playing with them while their father had friends over for "empanada parties" (my words, not thiers Smiley )   It was good times.  So to remember those good times, I often make his recipe.  And I figured I'd share the recipe and the how to with you all, so maybe you can make great memories surrounding delicious food, specifically these empanadas Cheesy

Recipe (slightly altered because before the onion was waaaaay overwhelming and  I like to cut out fat where I can):
Preheat your oven to 375`F

 1 large onion
 1lb of lean ground beef
 1Tbsp Paprika
 1 beef bulion cube
 1/2 cup water
 salt peper and oregano to taste

Fry onion and paprika in a large fry pan. When the onions are softened, add the ground beef.  Cook until well browned.   Add salt, pepper, and oregano.  Add 1/2 cup water and bullion cube and let simmer for 5-10 minutes. Remove from heat.

Extra filling ingredients:
hard boiled egg, cut into smallish pieces (boil this egg while you are cooking the beef!)

While the mixture is cooling make the dough.
~5cups flour
 2tsp baking powder
 1tsp salt
 1cup milk
 1/4lb lard (or shortening, like crisco)

Mix the flour, baking powder, and salt in a large mixing bowl.  Scald the milk in a sauce pan and add the lard.  Stir until the lard has melted.  Pour the lard and milk mixture into the flour and mix with a wooden spoon until you can't anymore. Continue kneading with your hands until you get a firm dough (much more firm then a bread. and more firm then a pie crust  Fool around with the measurements abit, to get what you feel is a workable texture)
Here you can see I have everything all lined up and ready to go.

Roll your dough out and cut it into large circles - aproximately 20cm across (or circles of your desired size, you could make these small as appetizers, but here I made them supper serving size)
Place the beef mixture, 2-3 rasins, 1 olive, and 1 piece of hard boiled egg.  Take a egg wash and wet one half of the circle around the edge.

Fold them over so you get a half circle, and pinch the dough together like this.  you get a good seal and no leaking if you do this.

Notice I punched holes with a fork along the top.  this is to let the steam out and so you can be sure they don't explode!  I also use the egg wash on top, for a nice golden brown top.

Lather rinse repeat until you run out of ingredients!

Now they are ready to hit the oven!   Bake for 30 minutes or until nicely browned.

If you have left over dough (like I did)  squish it out into weird flower like shapes and dust with cinamon and sugar, bake for 15 mins, and there you go, desert!

and here's one that has a few bites out of it that was temporarily abandoned by my 2 yr old.... Apparently he had better things to do lol  he did come back to finish it though!

Anyway I really hope you try these out, they are quite delicious.  I promise!

To answer a question about the liquid situation:
I did have one question:  when you cook the meat with the onions do you drain off the extra fat and water?  I did because it looked too runny--I used 85% lean meat so maybe it was too fat?
I've always used lean ground beef.   If you have a bunch of liquid that doesn't look like it's all fat (or you just simply don't care if theres a bit of extra fat in there -which is generally where I'm at lol)  You can outright skip the water, and just add and bullion cube.  Then just let it simmer until you've only got a little liquid left.  Sometimes the onion has alot of liquid in it, and sometimes it seems like some ground beef is more liquidy, so you may or may not need the water.

Although my boys are quite young yet to understand why we celebrate St. Patricks day (we are a 1/4 irish, or well, I am, I guess that mekes them  like 1/8?  what evs we're irish enough :p)  Anyway, I like to have fun with my pancakes on holidays like this.
so here they are:

and my son noticed one attempt at a pot'o'gold looked kinda l ike a snail, so I made a real snail too Smiley

This is my own pancake recipe, that I alter every time I make it, but these ones turned out great, so I'll do it again this way

1 1/2 cups all purpose flour
1 1/2 cups milk
2 eggs
2 tbsp sugar
3 tbsp baking powder
1tsp vanilla extract

mix the wet ingredients, and then add the flour, sugar, and baking powder, mix until it is all incorperated.  If there are a few little lumps thats okay.  In this batch I added some green food coloring. you know, cause shamrocks are green right?
To make designs , just think of a line drawing and wing it.  lol  just make sure your pan is quite hot, otherwise the lines will just blend.

all I have to say is  Shocked
okay thats not all I have to say... lol
so of course Valentines day calls for chocolate and lots of it right? Well, this might have pushed the envelope just a bit.  To quote the husband: "it's like you took just enough chocolate, then added more." LOL
These are the recipes I used (so you can make your own chocolate overload cake)
the only thing I did differently was I used 70%cocoa chocolate in the ganache, and in place of buttercream milk I used whipping cream.
It looks delicious....

The cake fell... but thats cause it got thunked down first thing out of the oven....  but it made it possible to STUFF ganache into the cake.... zomg drool.

This is what the cake looked like when I thought I was finished it. It needed more so white chocolate hearts it was!

this is how I made the White chocolate hearts:  
Melt  some white chocolate chips. spread onto a piece of parchement. I just free handed the shpes with a knife. If you are lucky enough to have a cookie cutter, use it!  you may need to let it sit awhile this way though.  Stick in freezer for 5 minutes, then pop out the pieces! Voila, delicious decorations  Grin

so yeah.. yum right?  hope your valentines day was wonderful too!!

okay so, Josephine Jada (we call her Josie, but she will grow up one day, hence the full name Josephine, incase she wants to be a lawyer or something)  January 4, 4:02pm, 8lbs 14oz, 21 3/4 inches (yeah, shes Loooooooooooooong)  She has piano hands (YAY!!!!) and the most beautiful fingernails.  
Delivery was pie, elective c-section.  worst part is the recovery (i say 'is' because I'm still feeling the effects of being cut in half lol)  
here she is a few days old:

She's a stubborn little monster(and thats a term of endearment around here.. she's wonderful) and refused to breastfeed  Cry  She lost nearly a pound in her first week and didn't gain any weight in the second week, so we had to put her on the bottle... she just wasn't getting it.  makes me super sad. I am happy to hear your little grandaughter is breastfeeding, MLF,  even after such a rough entry into the world.

This cutey was made with the socks for my new little baby girl.  It's the smallest socks you can find (or at least I can find)  Anyway she is about 2.75 inches tall and from her butt to her toes is 2.5 inches long.  I added the felt heart, because it's near valentines day and yeah I have hearts with love written on them on the mind.   Roll Eyes
Anyway here she is, to cute!  In my hand for a bit of a size reference:
