I just finished making something that was supposed to be like this salad. I was preparing to make the salad... The local corn was boiling, my lettuce leaves were waiting in the bowl with mozzarella and a chopped up avocado when... uhhhhh, my tomatoes aren't red anymore! Gross. Now what?
Israeli couscous! It was quite delicious. Especially, with a class of chardonnay. I think next time I'll nix the avocado though. It throws off the texture of a salad with corn and Israeli couscous.
