YAY!!  Food challenge!  Cheesy

This is my recipe for veggie burgers.  The patties are made with yummy and good-for-you ingredients.  You can dress them up any way you like.  This particular one was made with a roasted red pepper and basil aioli, pesto marinated mozzarella, some micro greens and a couple slices of roma tomato.  You will need a food processor to make the patties.



I use a basic recipe aioli recipe: 1 egg, 1/2 cup oil, vinegar and salt.  I add to it a red pepper that has been charred on the grill, small handful of fresh basil and a little garlic.  It gets all mixed up in a food processor.  You can use store bought mayonnaise and jarred roasted peppers if you wish.

For the pesto I use equal parts of basil & spinach, walnuts, garlic, lemon juice, & oil and whoosh it all together with a hand blender.  Mix some of the pesto and some grated mozzarella together in a bowl. 

You can use store bought buns if that is what you like; I like to make my own.  These buns were made with quinoa, oats, spelt and a little molasses for colour. 

OK!  On to the veggie patties.



You will need:

3/4 pound mushrooms
1 cup cooked quinoa
1/2 cup sundried tomatoes (not packed in oil is best)
2 cups chickpeas
2 tablespoons balsamic vinegar
garlic salt


1/2 cup grated carrot
1/2 cup grated beet
1/2 cup green peas
handful fresh basil
1/4 cup oats
1/4 cup bran
5 eggs

1. Drain the chickpeas if you are using canned and slice up the mushrooms.  (You can use any mushrooms you like.  These burgers were made with a mix of button and portabello.)

2. Put the first set of ingredients into a big pot or pan.  Cook with occasional stirring, over medium heat until the mushrooms are sweating; about 15 minutes.  Remove from heat and let this mixture cool a little bit.



3. While the chickpea mixture is cooling you can get the veggies ready.  Rough chop the carrot and beets in a food processor.  You can do them separately if you don't want your carrots turning purple  Cheesy Put in a big bowl.

4. Chop the basil and add to the big bowl with the carrot and beet along with the peas, oats, bran and eggs.



5. Puree the cooled chickpea and mushroom mixture in the food processor.  You want the texture to be really mushy.  Add to the big bowl.



6.  Mix really well with your hands.  The mixture will be quite wet.  Now it's time to make the patties.

7.  I weigh my patties into 5 oz portions, though you can make them as big or as small as you like.  I place them on a cookie sheet with parchment paper.



8.  Bake your patties on low heat.  I normally do between 250 and three hundred degrees.  It takes about 20 to 30 minutes.  Check every so often.  You no longer want the pattie to be wet to the touch and they should be somewhat 'solid' 

9. You can now eat them or let them cool and store.  They freeze ok, but are better fresh.

Just wanted to share my salsa recipe with you guys.  This makes a large batch and is great for canning or freezing.  Smiley



1 small diced red pepper
1 small diced green pepper
3 small diced celery hearts
1/2 cup small diced red onion
5 small diced roma tomatoes
1/4 cup garlic
2 cans (14 oz) tomato paste
7 cups water
1/2 cup red wine vinegar
2 tablespoons coarse salt
1 tablespoon coarse black pepper
1 tablespoon sugar
2 teaspoons ground cumin
2 teaspoons chili powder
1 teaspoon corriander (I like to use whole corrinader but ground up works good too)
juice of 2 limes

Put everything except for the lime juice in a big enough pot and simmer for half an hour.  Stir occasionally so nothing sticks to the bottom of the pot.  Squeeze in the lime juice and simmer for five minutes more.  Done!

The fab violentjayne posted this great tutorial for making your own pattern for a cute summer dress.  EllaRain shared her pretty dress here.  I love v-necks and cute casual dresses so when I saw the tutorial I was inspired to pull out my sewing machine.  I love this pattern sooo much.  It is very simple but you can play around with the length, neckline, shaping, etc...  I have a few more planned and think they will also make awesome winter dresses to pair with leggings.  Thank you so much violentjayne for sharing your tuts and great clothes with us!

MAGIC YARN BALL SWAP!!


You will send your partner a project kit consisting of a one (or more) skein pattern and yarn of corresponding weight/length for the pattern. The really fun part is that you will first make the yarn into a "magic yarn ball."  This means that you re-wind the yarn yourself, hiding little trinkets and treats inside the yarn as you go.  Some ideas already suggested include tiny toys, candy, crafting supplies, jewelry, etc.

Since we're all crafty people, it goes without saying that we should craft some of the treats ourselves. You will be required to have 15-20 things in the yarn ball and at least 4-5 of them should be small crafts made by you. If you are sending more than one skein, you are only required to send one MYB.  The additional skein(s) can be sent as is.

Also, while I know not everyone can afford it, if its only one skein, try to get the nicest yarn you can afford. Im not saying go buy a forty dollar ball of cashmere yarn (unless you really want to, in which case you can be my partner!) but try to get something youd be excited to receive. I will try to group partners by interests, as well as how much they're able to spend on the yarn.  

When you sign up, let your partner know if you already know what you want the yarn for ("I would like yarn so I can make the MagKnits Sophie Bag"); or, if you have a general idea ("I would like yarn and a pattern for a felt handbag"); or, if you just want a surprise pattern. If you have more than one idea for a pattern, feel free to give your partner a choice of patterns (or books) to choose from.

I thought I would share my favourite multi-grain dough recipe.  I love it for both loafs and buns.  Originally, I developed it as a bun to go with a veggie burger I had on last seasons menu.  Some customers had been requesting the veggie burger again so I made to today as a lunch special to surprise them.  Since I had my camera with me I thought it would be fun to snap some pictures of the dough making process.

I pretty much start with everything in a big bowl:



There's oats, bran, quinoa, brown sugar, molasses, yeast, spelt and whole wheat flour.  I add warm water and let the mixture come together.



When it gets frothy I add some vegetable oil and salt; then I give it a good whisking while adding some white flour.  When the mixture forms some resemblance of dough I knead in more white flour until it turns into a nice smooth, elastic ball.  I lightly cover the ball with a splash of oil, put it back into a big bowl and place it some where warm to rise.



Here it is after about an hour's rise:



I knead the dough a little more to get some of the gasses out; then I portion it into appropriate weights.  These buns are 4 oz which give me a nice big burger bun.  I roll the portions into balls and flatten the balls into discs; then I cover them with a towel and let rise one more time.



These rose for another hour, though times will vary based on the warmth and humidity of your kitchen.  I bake them at 350 for about 20 minutes.

Here they are out of the oven:




This recipe makes about 3 dozen 4 oz burger buns:

3 cups oats
1 cup bran
1/2 cup dry quinoa
2 cups brown sugar
2 cups whole wheat flour
1 cup spelt flour
3 T yeast
1 T molasses
8 cups water

2/3 cups oil
2 T salt

6-8 cups flour
