So... I love honey.  I mean LOVE honey.  I'll eat it plain out of the jar, in tea, on toast.
I'll admit I have several jars of honey hanging around my kitchen, and I'm about to get some more.  The thing is, my fella HATES honey.  (Or so he always says, I doubt he's even tried any in the last dozen years.)
Anyhow, to eliminate some of my stash, and to trick him into eating some of it with me, I'm trying to think of some great dessert recipes that incorporate honey.  I'm open for anything, really (except coconut, which I'm allergic to), any suggestions?  Cookies, breads, cakes, whatever you can think of, I'd love to hear about.

Edit:  the reason I ask you all instead of the internet is because I've definitely dealt with some internet-recipe trauma (wrong amounts/times/ratios), and I'm too afraid to end up with another batch of flat muffins or rock-hard cookies  Tongue

So i made a mix cd for a friend who graduated recently, and i decided to make a nice, summer-y cover for it. 

i used some scrap wrapping paper (the flowers), some stickers (the leaves and dinosaur), and assorted papers i had laying around. 

Here's the front:

And the back, before i wrote in the track names:

i wrote the title of the mix onto the pink circle on the front, and wrote the track listing next to the dinosaur in the sky/sand area.  it was a quick project, and my friend really loved the result.  (of course, it would have been quicker if i had an x-acto knife.  figures, i live with art school kids, and no one has one!)  the glitter glue up top wasn't a style choice, either, i had to use it because the cover was a BIT smaller than the cd case, and i didn't want it to slip around too much.
