For my stuffed pumpkin recipe, any orange squash would work just fine. So try with your butternut squash! Here's another recipe, my kids favorite!

PUMPKIN PANCAKE BATTER (a good way to trick your kids into eating their veggies!)
(play around with the measurements of flour/milk to get the consistency right. You can substitute puree with finely shredded carrot, apple, or zucchini)

2 eggs
1 cup pumpkin puree
4 c. milk
2 c. flour
1/2 c. ground flax seed
1/2 c. wheat germ
6 t. baking powder
1 t. salt
2 T. brown sugar
2 t. pumpkin pie spice

Top pancakes with butter & maple syrup, or butter and peach jam YUM!

About the stuffed pumpkin - Yes, that recipe could have a million variations! You could substitute beans or mushrooms perhaps if you're vegetarian. My mom's version has tomato paste with hamburger, and my mother in-law likes to put gandule beans, peppers, cilantro, and achiote oil with her rice. So that would be good too! I've even made an oriental rice with chicken, ginger, lemongrass, garlic, onion & soy sauce that went really good stuffed in a squash!

OK, this my improved version of a tried and true family recipe that my mom won a recipe contest with!! I hope you all love this recipe as much as I do, it's definately a MUST HAVE for a relaxing October/November family dinner! It's called MEAL IN A PUMPKIN, and looks sort of like the picture above (depending on how much veggies/meat you add to your rice!)

Ingredients:
1 medium sized pumpkin
5 cups brown rice
1-2 lbs meat (you could use ground beef, shredded chicken, or shredded pork)
1/4-1/2 lb. carrots
crushed garlic
1 medium sized onion
1/4-1/2 lb celery
8 cups chicken broth (or you could mix 1/2 broth 1/2 water)
fresh basil leaves
olive oil
salt/pepper to taste

Directions:
1. cut a hole in the top & hollow out your pumpkin.
2. In a food processor/chopper, finely chop the carrots, onion, celery, basil, (and also add the garlic). Fry up chopped veggies in the olive oil (perhaps adding a bit of water so it doesn't dry out).
3. In a separate pan, cook your meat. If it's chicken/pork, you will need to shred or chop it afterwards.
4. In the stockpot add rice, meat, and measure out broth. Add salt & pepper. Bring rice/veggie/meat mixture to a boil on high, then cover, reduce the heat to low and simmer for 20 minutes.
5. Fill the pumpkin with rice mixture, place the lid on top, cover with tin foil and place on a cookie sheet.
6. Put on the BOTTOM RACK of the oven and bake at 350 for 1 hour or until a knife inserts easily into the side of the pumpkin.
7. To serve, scoop rice out with a large spoon, and cut a piece of pumpkin away (starting from the top) in pieces.

Wow, there are some great ideas here! I love all the posts on sushi! I'm not a vegetarian, but my hubby calls me "borderline". Here are my ideas for you!

Mac & cheese: If you really want something healthier but can't afford anything but mac & cheese, add salsa & sour cream (if you're not opposed to dairy), or add frozen mixed veggies and a jar of pureed squash (baby food jar). Seriously, my kids love it & don't even know they're eating yellow veggies!

easy taco soup: A can of each - corn, tomatoes, black beans, red beans, and add onions if you like & a spoonful of crushed garlic if you like. Add a packet of taco seasoning for flavor & voila!

Flour tortillas with mexican rice & beans - make a big batch of homemade salsa! Here's the recipe:
Mexican rice: brown rice, tomato paste, mexican seasonings.
salsa: tomatillos, tomatoes, onion, garlic clove, japanese roasted peppers, cilantro - chop & microwave your tomatilloes, chop everything else & blend it all in a blender.   add salt & lime juice if you have it.

Eating vietnamese is cheap & easy! All you need is rice vermicelli noodles, veggie broth, soy sauce, sesame oil, ginger, garlic, lemongrass, and whatever oriental style veggies you have on hand. Shred the ginger & lemongrass, crush the garlic & mix it with your broth & soy sauce. Oriental chili sauce for spice if you like. Boil the noodles in the broth, add your veggies & cook until tender. Then at the last, add bean sprouts & cilantro raw mixed into your soup. Some examples of good veggies could be snap peas, mushrooms, shredded carrot, bok choy, spinach leaves)  

All these same ingredients could be adapted to a vietnamese noodle salad (drain the noodles, finely shred the veggies raw, include the cilantro and bean sprouts & add peanut sauce on top for a dressing), a spring roll (wrap the drained noodles and shredded veggies all up in a rice-paper spring roll wrapper & Dip in peanut sauce - don't forget your cilantro & bean sprouts!) or a veggie fried rice dish (instead of noodles use rice & fry it up - lots of ginger and lemongrass in this one, but no cilantro or bean sprouts!)

DesignVigilante - I live in mini-Mexico, but I've never known how to make all that yummy roadside mexican food. I can't wait to try the Chile Verde! And I can find all the ingredients for all your recipes at our Fiesta Foods!  Authentic Chile Verde, Taco Meat (w/no seasoning pkg), Caldo de res (Mexican Beef Stew), Authentic Mexican Menudo soup, Mexican Orange Rice, Refried Beans with Bacon & Chorizo

WOW, there have been some absolutely amazing pictures so far!! My favorite frames are the peacock frame & the tree frame! My favorite pictures are the water pictures & some of the tree pictures are pretty amazing too. I really enjoyed the steam clock, the harbor picture was truly awesome, and the waterfall & the scenic caves took my breath away!

WELL, I recieved from llisaredd today & LOVE my frame! There were some art pictures, plus lots of close-ups of flowers, ice, and cactuses - I love them all!!!! It's just SO hard to choose which ones to show you, so sorry about this being so pic hvy! Thank you Lisa!

That barn picture was the one I was trying to capture by climbing to the highest spot I could find! And the baby owl we captured, inspected for injuries, and returned to his nest at the top of the barn.  I'm glad you like my pictures & the frame seemed so "you"! Thank you for a great 1st swap!

Not sure on the time frame, but I sent it priority so that should help!!  I'm all high-strung about what she will think or say & if she likes it, this is SO exciting!!
