Im not really a big fan of pork.... but I made a really good dish one time:

Roasted tenderloin stuffed with garlic cloves. The sauce was a reduction of red wine, chopped figs, and chocolate. I threw a fresh stick of cinnamon in a pulled it out just before I blended the sauce to smooth it out a bit.

One thing Ive noticed is that the crust tends to flake off if the oil wasn't hot enough when you put the pieces in.  Grin

that is an incredibly BEAUTIFUL dress.. I mean, seriously, its awesome! great job with the satin material, I know its a bitch to work with.. dont think I could ever pull that off.
