Anyone have any tried and true recipes that they would be willing to share? You know, the ones that ALWAYS turn out perfectly -- the ones that people always want the recipe for -- or the ones that are your family favorite!

One of mine follows:


Southwestern Chicken Soup

49 1/2 ounces chicken broth, 1 can; reduced sodium
14 1/2 ounces diced tomatoes, 1 can
14 1/2 ounces tomatoes, 1 can; diced
1 pound boneless skinless chicken breasts, cut into 1/2" pieces
1 large onion, chopped
1/3 cup fresh cilantro, minced
4 ounces green chiles, 1 can; chopped
1 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
3 cups frozen whole kernel corn, thawed
4 ounces tortilla chips
4 oz reduced fat cheddar cheese, 1 cup (or mexican blend)

In large saucepan, combine first twelve ingredients. Bring to boil, reduce heat and simmer for 1 hr. Add corn, cool 10 minutes longer. Top each serving with tortilla chips, sprinkle with cheese.

Yields: 8 servings.

Per Serving: 273 Calories; 7g Fat (23.4% calories from fat); 24g Protein; 30g Carbohydrate; 4g Dietary Fiber; 36mg Cholesterol; 772mg Sodium.  Exchanges: 1 1/2 Grain(Starch); 2 1/2 Lean Meat; 1 1/2 Vegetable; 1 Fat.



This recipe is delish and soooooo easy!
